Sourced from the volcanic highlands of Popayán's Munchique plateau, this espresso showcases the meticulous work of Indigenous farming cooperatives who blend ancestral techniques with regenerative practices. Grown between 1500-2000 meters, the slow ripening in cool mountain air develops exceptional density and complexity. The washed process and shade-dried fermentation preserve the varietal clarity of Caturra and Typica, delivering a structured shot with vibrant acidity, delicate nectarine and lychee notes, and a refined sweetness that lingers. Each cup reflects both terroir and purpose—supporting fair-trade practices that strengthen farming communities while honouring their cultural connection to coffee cultivation.

Because this is a high-altitude, washed coffee, it’s quite dense. To get the most out of those delicate fruit notes without over-extracting, I’d suggest:
Target Ratio: 1:2 to 1:2.2 (e.g., 20g in, 40g–44g out).
Shot Time: 27–30 seconds.
