About the Coffee
Rather than one farm, El Indio is a blend of naturally processed coffees, all dried at the ASOPEP communal drying station. ASOPEP is made up of 175 coffee-farming families, so this is very much a team effort.
Growers deliver their cherries to ASOPEP, where they're sorted by hand, fermented, then dried on raised beds or concrete patios until they're down to 11% moisture. Simple on paper, painstaking in practice.
Home is Tolima, one of Colombia's most productive coffee regions, and one with a serious track record: for the last 10 years it has been represented at Cup of Excellence and at every competition the Colombian Coffee Federation runs. Not bad going.
Natural Caturra, bold and fruit-forward. Expect passionfruit and plum up front, then a rum and raisin chocolate finish that's more dessert trolley than breakfast table.
Barista Notes — Filter
Bold, fruity and carrying a tropical rum sweetness, this lot is happiest starting at 1:15.5, a touch tighter than you might be used to.
- Ratio: 1:15.5 (15g to 232g water, or 18g to 279g) — the slightly tighter ratio adds body and mouthfeel, so the plum, rum and dark chocolate come through without drowning out the passionfruit acidity
- Time: 3:00–3:30 — natural Caturra carries more solubles and drains a little slower, and the extra time draws out the deeper fermented sugars and that raisin chocolate finish without any harshness
- Temp: 90–92°C — keeping it a bit lower looks after the passionfruit brightness and rum aromatics, so the fruit stays lively and dry, bitter alcohol notes stay out of the cup
