In the heart of Guatemala's western highlands, where the mountains whisper secrets to the sky and the air is kissed by the cool breath of elevation, lies La Libertad. This land, cradled by peaks and blessed with rich clay loam soil, is a sanctuary for coffee, a place where every bean is nurtured like a dream.

The Hidalgo family has been the custodians of this dream since the 1950s, with Silvano Hidalgo taking the torch in the 1970s. He named his piece of paradise "Las Camelias," inspired by the delicate camellia flowers that grace his garden, a symbol of beauty and resilience. Here, he cultivates varieties like Caturra, Bourbon, and Sarchimor, each chosen for their exquisite cup quality, painting flavors with the brush of the highlands.

The climate here is gentle, with temperatures that dance between 12° to 24°C, bathed yearly by 1550 mm of rain, creating a symphony for coffee growth. Shade trees like Gravilea and Inga stand as guardians, their branches a canopy of protection, ensuring the coffee plants thrive in optimal conditions. Each year, the farm is rejuvenated through careful pruning, trimming, and fertilisation, a testament to dedication and love for the craft.

At "Finca El Sombrero," named to honour its unique character, the harvest is nothing short of an art form. Each cherry is handpicked at the peak of ripeness, a meticulous selection process that promises only the finest. The journey of each bean from tree to cup involves de-pulping, followed by a 24-hour fermentation dance in dry tanks, washing in channels, and then a slow, sun-kissed drying on patios or African beds for 16 days.

Once dried, these beans embark on a journey to Guatemala City's dry mill, where they are scrutinised in the QC lab, ensuring they meet the stringent standards of quality. Prepared for their global voyage, they are lovingly packaged in high barrier liner bags, nestled within Jute, safeguarding their essence for the world to savour.

This is not just coffee; it's a legacy, a love letter from the mountains of La Libertad to the world, from the Hidalgo family, who have poured their heart and soul into every cup. Each sip is a celebration of this land, its people, and the enduring spirit of Las Camelias.
